If you're looking for a laptop experience you'll have to jailbreak to get what you're looking for. In the case of email, you can add a tweak called "AnyAttach" that solves your particular problem. Yes I'm aware something this rudimentary should be considered a stock feature of the iOS mail app but sometimes you've got to go the extra mile.

LMK if you need a hand with any jailbreaking features/apps if you ever elect to go that route.
